Job Description
For a 5* Luxury Hotel in Milan we are looking for a
Food & Beverage Director
Core responsibilities:
- Plan and manage the operations of the Food and Beverage divisions to achieve customer satisfaction and quality service while meeting/exceeding financial goals.
- Responsible for short- and long-term planning and the management of the Food & Beverage operations in the front and back of the house.
- Develops and manages Food and Beverage budget, reviews financial reports and statements to determine how Food and Beverage is performing against budget.
- Implement effective control of food, beverage and labor costs among all sub-departments.
- Determines pricing based on projected sales volume and costs, including food costs, labor costs, overhead costs, and profit margins.
- Plan and direct the functions of administration and planning of the Food and Beverage Department to meet the daily needs of the operation.
- Estimates food, liquor, wine, and other beverage consumption in order to anticipate amounts to be purchased or requisitioned.
- Clearly describe, assign and delegate responsibility and authority for the operation of the various food and beverage sub departments.
- Develop, implement and monitor schedules for the operation of all outlets to achieve a profitable result.
- Participate with the chef and outlet managers in the creation of attractive menus.
- Assist the area managers in establishing and achieving predetermined profit objectives and desire standards of quality food, service, cleanliness, merchandising and promotion.
- Develop operating tools necessary and incidental to modern management principles, e.g. budgeting, forecasting purchase specifications, recipes, portion specifications, menu abstracts, food production control, job descriptions, etc.
- Provides services that are above and beyond for customer satisfaction and retention.
- Continuously evaluate the performance and encourage improvement of the personnel in the food and beverage department.
- Plan and administer training and development within the department
Job Requirements:
- Current or previous experience working as Food & Beverage Director or as Food & Beverage Assistant Director role with strong focus to customer service and banquets, in a 5-star hotel or similar hospitality industry
- Knowledge of software management tools with operating accounts, P&L, budgets, ratios and financial reports.
- Fluent English and Italian
- Highly organized person with strong planning skills
- A proven track record of successfully leading people
- High level customer service ambassador
- Strong communications skills and guest-oriented attitude
